Y'all. I cannot get decent queso blanco in DC to save my life. I know, it's not authentic Mexican food. 'Murica! BUT, I dream of this stuff and I like hot things. Recently, I bit the bullet and made it myself using this recipe below. It is sooooooo good and was a hit when I took it to a party recently. Easy to make, just be sure you stir often and don't let it crust on the bottom of your saucepan. If you don't like spicy things, use a mild pepper or omit entirely.
